Today we begin our countdown to the yummy new book Sprinkles & Secrets by Lisa Schroeder. The book is a companion to It’s Raining Cupcakes — and if that book was any indication, than Sprinkles & Secrets will surely leave you craving some tasty treats.
So periodically over the next couple weeks, we’ll be bringing you some delicious recipes courtesy of some other great middle grade authors — plus a treat from Lisa herself!
And we thought what better way to start things off then by bringing you a treat ourselves! We present to you …
Peanut Butter Cup Brownies
This is a recipe I doctored up myself, actually — which means it’s pretty simple to make. I’ve adapted the recipe from the Fudge Brownie recipe found in the Better Homes & Garden cookbook, but any basic brownie recipe will do for starters.
1/2 cup butter or margarine
1 cup granulated sugar
1 tsp vanilla
2 1-ounce squares unsweetened chocolate, melted and cooled
3/4 cup sifted all-purpose flour
Approx . 1 1/2 cups peanut butter chips
Approx. 12 mini peanut butter cups
Preheat oven to 350 degrees.
In medium saucepan melt butter and chocolate. Remove from heat; stir in sugar. Blend in eggs one at a time. Add vanilla. Stir in flour; mix well. Add about 1 cup of the peanut butter chips and stir lightly.
Spread in greased 8x8x2-inch pan.
Unwrap the mini peanut butter cups and chop roughly, approximately into quarters. Sprinkle the remaining peanut butter chips and the peanut butter cup pieces liberally over the top of the brownies.
Bake at 350 degrees for 30 minutes. Be careful not to overbake. Cool. Cut into squares & enjoy with a nice, tall glass of milk!
* If you like your brownies extra chocolatey, you can also stir in a handful of milk chocolate or semi-sweet chocolate chips!
